Sweet Tropical Fruit Salad



This is a traditional Filipino dish, made easy by using canned fruits. Just what everyone needs for a quick and easy dessert when friends or family are coming over for a feast. It is great for any festive occasion but goes down perfectly after a Christmas dinner. This dish always tastes better made a day ahead.





Coconut Gel
Ingredients:

2 Large cans mixed fruit salad
1 jar coconut gel
2 cans lychees
1 can sweetened condensed milk
1 can evaporated milk
1/2 can whipped cream


Method:


1. Place a strainer over a large bowl


2. Empty all fruits with juice into strainer, leave for juice to drain while preparing cream mixture.

3. Empty can of evaporated milk into a large mixing bowl. Then slowly add the can of sweetened condensed milk while stirring and mix till well combined.





4. Squeeze out enough whipped cream from can to cover top of condensed and evaporated milk mixture. Using a wooden spoon gently mix together until most of the cream is dissolved.  Once mixed do the same again, you should only need about half the can of whipped cream. Continue this process until it becomes slightly thickened.




5. Place the drained fruit into a casserole or dessert dish (preferably one with a lid).



6. Then slowly pour the creamy mixture over the top of the fruit until all is covered.

















7. Cover with lid and Place in fridge until ready to serve.

This dish tastes better the longer the fruit sits in the creamy mixture, so if you can make it the day before needed it will be worth the wait!
